W165 (Saccharomyces cerevisiae)

The W165 is a typical Altbier yeast with a slightly fruity and stringy overall character. Similar to the Kölsch yeast, this strain can be fermented at both high and low temperatures.

The W165 also cuts a fine figure in the production of American Ales and PAs.

- content of esters (depending on the fermentation temperature): low to normal

- normal amount of higher alcohols

- normal settling behaviour

- good diacetyl reduction

- normal to high AV° (approx. 78-82%)

Recommended fermentation temperature for Alt: 16-18°C (15-23°C)

Recommended fermentation temperature for Ale: 18-21°C (15-23°C)
