W68, (Saccharomyces cerevisiae)
It is not without reason the W68 is the most used wheat beer yeast worldwide. This yeast is ideal for the production of various top-fermented Weissbier specialities. It is characterised by its typical aroma profile. A light, pleasant spicy note (clove) combined with exactly the right amount of fruity flavor components (isoamyl acetate and ethyl acetate). A banana flavor is clearly recognizable.

Recommended fermentation temperature: 18-20°C (16-23°C)
